Jess Pryles visited Texas for the first time about a dozen years ago, and one of her best memories of that visit was her first taste of Texas barbecue. That fork in the road led her down a path that has transplanted her from her native Australia to Austin. It also opened her eyes -- and stomach -- to the joys of all manner of meat, and she has become a professional "Hardcore Carnivore."
She’s spent years educating herself about meat, and one of the most meaningful experiences she’s had along the way was her first hunting experience.
"It was extremely important to me to be able to participate in the complete start-to-finish process of being a carnivore. My first deer hunt was one of the most liberating and self-sufficient experiences of my life."
She’s thrilled to be a We Will Not Be Tamed ambassador for Texas Parks and Wildlife Foundation (TPWF). We Will Not Be Tamed calls us to appreciate the wildness of Texas, the vastness of our Texas spirit and why we should be inspired to conserve it.

The Stewards pivoted and Created #StewardsLive on Instagram to bring unique guests to talk about their role in conservation to all of our members statewide. Each week, #StewardsLive streams a live conversation with some amazing guests, including former Texas Game Warden Colonel Grahame Jones, Jay Kleberg from Explore Ranches, Jess Pryles from Hardcore Carnivore, and Edgar Diaz from Sight Line Provisions, just to name a few. Yep, it’s that time of the year again when hundreds of thousands of dove hunters in Texas take to the field to pursue their favorite game bird. A few weeks prior to the opening of dove season, Texas Parks and Wildlife Department biologists captured doves across the state to put bands on their legs. It’s part of a national effort coordinated by the U.S. Fish and Wildlife Service to gather information about the birds.
